Sitting in a wonderful restaurant in a the woods in Baden and enjoying really good rose and now my "Käse Spätzle". Great beginning for continuing to Burgundy, France.
its time. After 10 days of soaking the green walnuts in water and changing it everyday to remove the brewing tannin, I'm cooking the black walnut stew. The smell is really wild and unique. Now they will be jarred and then I have to wait six weeks before enjoying with cheese. Yum! Patience is rewarded.
My urban garden salad. All from the balcony, except the pine nuts and buckwheat. Asia mix, various tomatoes (all yellow this year), nasturtium, mint leaves, fennel greens and mini basil.
Patience and discipline required, but the result blows you away.
These will be indulged in the fall with a wonderful old cheese and a good wine.
It is most tempting now to buy plenty of fresh produce, as it is offered in abundance for not much money at all. This table full of yummy delights did cost not more than 20€ (and not even all is shown here). Comparing that and all one can do with it to 20 € worth of bad industry prepared food, it's a great deal. I made a summer soup, salad, blueberry pancakes, a tart with apricots and peaches, baked small aubergines (the purple long beauties) with a porcini omelette and infused oils and schnaps.
Kohlroulade, a very delicious German dish with ground beef or pork or a mixture of both, wrapped in cabbage leafs. Here sautéed in butter, white wine with mushrooms, fennel greens and a tomatoe salad. Ready to watch the soccer game now.
In July and August, multiple sorts of vegetable and fruit appear which are almost black, dark blue or dark violet. The polish blueberries, which turn your tongue completely purple and if they weren't so yummy I would use them to dye clothes or paper. Black currants – wonderful to add to a salad or to make cassis, sorbet or jelly. Purple string beans, which have the purest string bean taste I know of, leaving all the regular beans behind. Or black grapes from Italy, which remind me of the grapes I used to eat as a child.
And while cleaning the currants, 4 little gorgeous snails appeared. They are not going to be added to the cassis, but found a continuation of their lifes on my balcony. I do think they make beautiful models.
Saturday Market in July! Now there are so many vegetables offered and all the berries are hard to resist ! Today we are cooking pikeperch or zander in whitewine-caper sauce with fennelgreens and sautéed baby zucchinis. As an appetizer fresh purslane (or portulaca) with tiny tomatoes and fresh favabeans and as a dessert follows a blueberry pancake. Pictures follow.
